Here’s What You’ll Need

5-6 Large potatoes
2/3 cup Sour cream
½ cup Heavy cream
¼ cup Salted butter
4 oz. Cream cheese
1 lb. Bacon- cooked until crispy and roughly chopped
2 cups Colby jack cheese- divided
1 Tbsp Fresh parsley- chopped
1 tsp. Garlic salt
Salt and pepper to taste
Chives for garnish

Here’s How You Do It

  1. Preheat oven to 375 degrees Fahrenheit.
  2. Dice peeled or unpeeled potatoes and place in a large pot with water.
  3. Bring to a boil and allow to cook until tender.
  4. Drain potatoes and place in a large bowl. 
  5. Add in the sour cream, heavy cream, butter, and cream cheese. 
  6. Mash together until the desired consistency is achieved.
  7. Continue with adding in the chopped bacon. (Keep some aside for the topping)
  8. Add in 1½ cups of the cheese, the parsley, garlic salt, and salt and pepper.
  9. Mix until everything is well incorporated. 
  10. Place the mixture into a baking dish.
  11. Evenly spread out the mixture.
  12.  Add the remaining cheese, bacon, and the chives to the top of the mixture.
  13. Bake for 25-30 minutes or until the cheese is completely melted. 
  14. Once baked, remove from the oven and allow to cool to a desired temperature.
  15. Serve and enjoy.
